Abstract
Jabuke predstavljaju voće koje je najšire uzgajano u cijelom svijetu. Osim konzumacije u sirovom obliku, jabuke se često prerađuju u sokove, umake i razne druge oblike, što ovisi o stadijima zrelosti koji se utvrđuju metodama određivanja optimalnog roka berbe. Poznavanje ekoloških uvjeta za proizvodnju i odabir sorte jabuke važni su čimbenici u proizvodnom procesu. U radu su opisani postupci određivanja rokova berbe jabuke korištenjem subjektivnih i objektivnih metoda. Uz navedene metode za određivanje optimalnog roka berbe, u radu je obrađena morfologija jabuke, navedene su hranjive vrijednosti jabuke te čuvanje i prerada jabuke.
Abstract (english)
Apples are the fruit that is most widely grown in the entire world. Besides eating it raw, apples are often processed in juices, sauces and various different forms, which depend on the stages of ripeness that are determined with the methods for determining the optimal time to pick apples. Knowing the ecological terms for the production and the process of choosing the right apple type are of great importance in the production process. The paper describes the processes of determining the optimal times to pick apples by using objective and subjective methods. With the mentioned methods, the paper also describes the morphology of the apple fruit and lists the nutritional values of the apple fruit along with the storage of apples and their processing.
