Abstract
Hrvatska je zemlja bogate tradicije uzgoja vinove loze i proizvodnje vina, što može zahvaliti klimatskim i zemljišnim uvjetima pogodnim za ovu gospodarsku djelatnost. Uz povoljne prirodne uvjete razvoju vinogradarstva i vinarstva doprinosi i znanje, te bogato iskustvo hrvatskih vinara. U pogledu vinogradarske i vinarske proizvodnje najznačajnija podregija u sastavu Kontinentalne Hrvatske je područje Baranje, gdje četiri vodeće vinarije proizvode dvije trećine grožđa i vina namijenjenih tržištu. Proizvodnja bijelih vina započinje berbom grožđa, a nastavlja se u vinskom podrumu gdje se odvija runjanje i muljanje grožđa, prešanje, sumporenje mošta, te ocjeđivanje, hlađenje i čišćenje mošta. Nakon toga slijedi proces alkoholne fermentacije, i to je zapravo početak proizvodnje vina. U ovoj fazi proizvodnje obavlja se pretakanje vina, zatim bistrenje i filtracija, te stabilizacija i dozrijevanje vina. Kada se postigne željena kvaliteta vina, ono se puni u boce i skladišti u posebno opremljenim prostorijama (podrumima).
Abstract (english)
Croatia is a country with well known tradition of growing grapes and wine production thanks to favourable climate and soil conditions. Beside favourable natural conditions, there are also knowledge and long tradition of Croatian wine makers which improve wine quality. In aspect of viticulture and wine production in continental Croatia, one of the most important region is sub-region Baranja, where four major wineries produce two-thirds of the grapes and wine for the market. Production of white wine begins with harvest and continues in wine cellars where grapes are crushed and pressed, followed by addition of sulfur dioxide, draining, cooling and filtering. In process alcoholic fermentation, which follows, begins the wine production. In this phase, wine is decanted, cleared and filtered. After that, wine stabilizes and ripens. When desired quality is reached, wine is filled in the bottles and stored in wine cellars.
