Abstract
Cikorija je dvogodišnja biljka iz porodice Asteraceae. Uzgaja se zbog zadebljalog korijena koji ima značaj u prehrambenoj i farmaceutskoj industriji. Korijen se suši i prži za preradu u kavovine. Inulin iz korijena cikorije pripada u prehrambena vlakna i koristi se kao probiotik. Iako se cikorija u Hrvatskoj uzgaja na malim površinama može se reći da postoji tradicija uzgoja i prerade, ali i tradicija konzumiranja kavovine od cikorije. Cilj završnog rada je opisati uzgoj i načine upotrebe cikorije.
Abstract (english)
Chicory is a biennial plant of the family of Asteraceae. It is grown because of root that has significance in the food and pharmaceutical industry. The root is dried and frying for processing in coffee substitutes. Inulin from chicory root belongs to the fibres and used as a probiotic. Although the chicory in Croatia is grown on small surfaces, it can be said that there is a tradition of growing and processing, but also a tradition of consuming coffee substitutes of chicory. The aim of the final paper is to describe a growing and ways to use chicory.
